Broiled Oysters Rockefeller
Ingredients:
- 16 oz. of fresh oysters
- 1/2 tsp Tony Cachere or Obay seasoning
- 1/2 tsp sea salt
- 1 tsp pepper
- 2 tsp parsley
- 2 tsp thyme
- 2 tsp oregano
- 1/4 tsp red pepper flakes
- 1 tsp cilantro
- 1 tsp minced garlic
- 1/2 tsp melted butter
- 2 tbsp. Champagne or Sparkling Wine
- 2 tbsp. pomegranate red wine vinegar or your favorite vinegar
- 1/4 cup extra virgin olive oil
- 1/2 cup freshly grated parmesan cheese
- 1 lemon
- Preheat broiler to High
- Mix melted butter, minced garlic and half lemon juice together
- In a large bowl stir together all the dry seasonings, garlic butter, champagne, vinegar and olive oil.
- Add oysters to the bowl and toss to coat completely.
- Place oysters in a baking dish and add parmesan cheese on top
- Broil for 3 to 4 minutes.
- Squeeze half lemon on top and sprinkle with additional parsley and cilantro
- Serve with hot sauce, garlic butter, lemon wedges & a glass of your favorite Champagne cocktail, Enjoy!
