Nancy’s Sweet Potato Pie Recipe

 


Ingredients: 

3 lb bag of sweet potatoes. 

2 regular pie crust. 

1 tbsp Vanilla extract.  

1/2 cup evaporated milk. 

2 eggs. 

1 stick of soften butter. 

1 tsp cinnamon  

1 tsp nutmeg  

1 to 2 cups of sugar (depends on natural sweetness of the cooked sweet potatoes)

Instructions: 

  1. Preheat oven to 350°F  
  2. Bake the sweet potatoes for 1 hour. 
  3. Allow potatoes to cool then peel. 
  4. In a large bowl whisk or mix sweet potatoes, cinnamon, nutmeg, sugar until smooth. 
  5. Slow mix in extract, evaporated milk, butter and eggs into the sweet potatoes. 
  6. Spoons mixture into 2 pie crust  
  7. Bake for 45 to 50 minutes.  
  8. Allow to cool & Enjoy!
