Breakfast Quiche





Ingredients:

2 regular pie crust  

1 to 2 lbs. breakfast meat of your choice  

2 to 3 cups shredded cheese  

1 finely chopped onion  

1 finely chopped green bell pepper  

1 finely chopped red bell pepper  

1 finely chopped yellow bell pepper  

8 oz. Spinach

8 oz. Mushrooms 

12 eggs, beaten  

½ to 1 tsp salt (if you are using pork as your meat use less salt)  

1 tsp pepper  

1 tsp parsley  

2 tbsp of butter  


Instructions:

1.   Preheat oven to 350°F

2.     Beat the eggs in a large bowl with salt, pepper, and parsley

3.    Cook breakfast meat on the stove in a frying pan

4.    Remove meat from pan, crumble and set aside

5.    In the same pan you cooked the meat place 2 tbsp of butter and cook the veggies until soft

6.    Mix the breakfast meat, veggies and 1 cup of cheese together

7.    Spoon the mixture into the 2-pie crust

8.    Pour the beaten eggs on top of the mixture being careful not to over fill the pie crust

9.    Sprinkle the remaining cheese on top

10. Bake for 30 – 40 minutes, let cool and Enjoy!
