Three Meat Chili





 Ingredients: 
  • 1lb Ground Beef  
  • 1lb Ground Pork  
  • 6 -8 Slices Bacon  
  • 1 bell pepper  
  • 1 small finely chopped jalapeno pepper  
  • 1 onion  
  • 1 tsp minced garlic  
  • 1 15oz can kidney beans (drained & rinsed)  
  • 1 15oz can black beans (drained & rinsed)  
  •  1 24oz can crushed  tomatoes  
  • 1 15oz can diced tomatoes  
  • 1 bottle or can of your favorite beer  
  • 2 tsp salt  
  • 2 tsp pepper  
  • 3 tbsp chili powder  
  • 1 tbsp ground cumin  
  • 1 tsp oregano  
  • 1 tsp liquid smoke  
  • 1 tsp paprika  
  • 1 tsp onion powder  
  • 1 tsp garlic powder 
  • 1 tbsp butter 

Instructions: 

  1. In a large pot cook the bacon until crisp  
  2. Once bacon is cooked add onions, bell pepper, chopped jalapeno peppers, minced garlic, butter and all dry seasonings  
  1. Cook until the vegetables are soft and tender    
  2. Add the ground beef & liquid smoke. Break up the beef and cook until beginning to brown  
  3. Add the ground pork and brown until all meat is cooked and no longer pink  
  1. Stir in the beans, beer crushed and dices tomatoes  
  2. Turn the heat down to low and simmer for 1 1/2 hours  
  3. Taste and add more salt, pepper & seasoning as needed  
  4. Server with beer or wine and your favorite chili toppings (cheese, sour cream, corn bread, corn chips, chives, scallions, etc...) ENJOY!
