Warm Bacon & Collard Greens Salad
Ingredients:
- 2 - 3 cups chopped collard greens
- 6 -8 slices of bacon
- 2 tbsp oil
- 1 tsp sea salt
- 1 tsp pepper
- 1 tsp parsley
- 1 tsp italian seasoning
- 1 tsp cilantro
- 1 tsp garlic powder
- 1 tbsp sugar
- 1 cup Balsamic Vinaigrette Dressing
- 1/4 cup Dijon mustard
Instructions:
Bacon Dressing:
- Fry bacon in skillet
- Remove bacon and set aside on paper towel to drain but leave bacon grease in skillet
- Stir Balsamic Vinaigrette dressing and Dijon mustard together in a bowl
- Add crumbled bacon to the dressing mixture
Collard Greens:
- Clean & chop Collard Greens
- Season greens with all of the dry seasonings
- Reheat bacon grease on medium high heat
- Add greens and stir and cook until the greens become soft
- Slowly add the Bacon dressing to the greens and allow it to come to a quick boil
- Stir in the sugar until dissolved
- Turn the collard greens off, transfer to a bowl, allow to cool and Enjoy!
