Sunday Brunch with Buttermilk Chicken & Waffles
Ingredients: Waffles:
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups buttermilk
- 1/2 tsp vanilla extract
- 1/2 tsp Sauternes Sweet Dessert Wine (or dessert wine of your choice)
- 2 eggs
- 1 stick of melted butter
- Combine flour, baking powder, baking soda and salt together in a bowl
- In a separate bowl whisk buttermilk, wine, eggs and butter together
- Slowly pour the wet ingredients into the flour mixture, and whisk/mix together until a creamy batter is well formed
- Pour the mixture in a waffle iron according to your waffle iron instructions.
Fried Chicken:
- Vegetable oil (enough to fill cast iron skillet or pan about half way)
- 2 lbs. Boneless-Skinless Chicken Thighs
- 1 1/2 cup flour (or your favorite chicken fry mix)
- 1 tsp Seasoning Salt
- 1 tsp pepper
- 1 cup buttermilk
- Heat vegetable oil to 350°F
- Cut chicken thighs in half
- Soak chicken thighs in buttermilk
- Remove thighs from buttermilk and dredge in flour/chicken fry mix
- Place thighs in hot oil, do not overcrowd the pan so chicken will fry evenly
- Cut for about 2 - 3 minutes on each side
- Remove and place on paper towel lined plate to drain
- Plate waffles and chicken, Pour your favorite Mimosa and ENJOY!
