Sunday Brunch with Buttermilk Chicken & Waffles



 


Ingredients:
 
Waffles:

  • 1 1/2 cups flour 
  • 2 tsp baking powder  
  • 1/2 tsp salt 
  •  1 1/2 cups buttermilk 
  • 1/2 tsp vanilla extract
  • 1/2 tsp Sauternes Sweet Dessert Wine (or dessert wine of your choice) 
  • 2 eggs 
  • 1 stick of melted butter 
 
  1. Combine flour, baking powder, baking soda and salt together in a bowl
  2. In a separate bowl whisk buttermilk, wine, eggs and butter together
  3. Slowly pour the wet ingredients into the flour mixture, and whisk/mix together until a creamy batter is well formed 
  4. Pour the mixture in a waffle iron according to your waffle iron instructions.


Fried Chicken:

  • Vegetable oil (enough to fill cast iron skillet or pan about half way)
  • 2 lbs. Boneless-Skinless Chicken Thighs
  • 1 1/2 cup flour (or your favorite chicken fry mix)
  • 1 tsp Seasoning Salt
  • 1 tsp pepper
  • 1 cup buttermilk

 
 
  1. Heat vegetable oil to 350°F
  2. Cut chicken thighs in half
  3. Soak chicken thighs in buttermilk
  4. Remove thighs from buttermilk and dredge in flour/chicken fry mix
  5. Place thighs in hot oil, do not overcrowd the pan so chicken will fry evenly
  6. Cut for about 2 - 3 minutes on each side
  7. Remove and place on paper towel lined plate to drain 
  8. Plate waffles and chicken, Pour your favorite Mimosa and ENJOY!
