Fish and Shrimp Tacos

Ingredients: 

  • 1 lb of shrimp of your choice 
  • 1 lb of Fish of your choice 
  • Soft Tortilla shells 
  • Vegetable oil (enough to fill cast iron skillet or pan half way)  
  • 1 - 2  cups cornmeal depending on how much seafood you have 
  • 1 pkg Cabbage slaw  
  • 1 cup mayo 
  • 1/4 cup Rose Wine  
  • 2 tsp cilantro 
  • 1 - 2 limes 
  • 2 tsp salt  
  • 2 tsp pepper  
  • 2 tsp seasoning salt  
  • 2 tsp garlic powder 
  • 1 tbsp Sriracha Sauce 

Rose Wine Slaw Instructions:

  1. Rinse your Cabbage Slaw and place in a large bowl 
  2. Add 1/2 cup mayo, Rose wine salt, pepper, cilantro, to taste and mix well 
  3. Squeeze in the the lime to your taste, stir, cover and place in the fridge 

Spicy Cilantro Lime Mayo Instructions:

  1. Mix together in a small bowl 1/2 cup mayo, 1 tbsp Sriracha Sauce, lime, salt, pepper, cilantro to taste
  2. Cover bowl and place in the fridge

Fish and Shrimp Instructions:

  1. Heat vegetable oil in pan to 350°F 
  2. Season the fish and shrimp with salt, pepper, seasoning salt, garlic powder
  3. Dredge the fish and shrimp in the corn meal
  4. Place the fish in hot vegetable oil
  5. Let fish fry for approximately 2 - 3 minutes, fli and repeat
  6. Fry shrimp in the same pan for about 2 minutes 
  7. Place fish and shrimp on paper towel lined plate to drain
  8. Cut fish up into bite size pieces
  9. Heat tortilla on a hot flat skillet or griddle for 1 - 2  minutes each side or wrap in paper towels and place in microwave for a few seconds
  10. Spoon the Spicy Cilantro Lime Mayo on the tortilla
  11. Place a few pieces of fish or shrimp on top
  12. Place some of the Rose Wine Cabbage Slaw on top of the seafood
  13. Squeeze a little lime juice on top and top with a small piece of lime (optional)
  14. Pour yourself a glass of Rose Wine and ENJOY!
